This is a fruity and spicy flavored brew that is a favorite in Germany. It is normal for this beer to have a remarkably cloudy finish. Purchase a wheat beer yeast strain from your local brew shop to replicate the true flavors of a traditional hefeweizen. Suggested lager time is 1 month.
1 Can Blackrock Whispering Wheat malt extract
1 Blackrock light
1 11.5 gram sachet W-06 Fermentis yeast
NB do not add any sugar.
Thoroughly clean and sterilise all equipment
Remove yeast packet (not needed for this recipe) from under lid of the Whispering Wheat malt extract.
Stand both cans of malt extract in hot water for 10 minutes to soften contents.
Dissolve both cans of malt extract in approximately 2 litres of very hot water in your fermenter. Then make up volume to 23 litres with cold water, making sure the final temperature is between 18 and 28 degrees celcius.
Open the yeast package, sprinkle W-06 Fermentis yeast over the surface of the liquid and allow to sit for 5 minutes. Stir vigorously again, then screw the lid on with the airlock(half-filled with boiled and cooled water).
Ferment for a minimum of 2 weeks between 18 to 28 degrees celcius.
For bottling follow the steps outlined on the back of your tin of Blackrock Malt extract.
Best results allow to secondary ferment for a minimum of 6 weeks.
